Easy Broccoli Soup Recipe

With cold weather coming on, I'm getting ansy for some good soup recipes. Here's one that Anita shared with me and I tried it tonight...it is WONDERFUL! Zach and Abby both loved it. It is so simple.

1 (14 oz) bag frozen brocolli florets (I used chopped so that the pieces would be smaller)
1 can (10 3/4 oz) cheddar cheese soup
1 can (10 3/4 oz) cream of celery
1 lb. Velveeta cheese
Season as desired (I used salt, pepper & onion flakes)

Cook broccoli according to package directions. Do not drain water. Then add can of Cheddar cheese, cream of celery and Velveeta cheese. Cook on low until Velveeta is completely melted. Stir frequently to prevent scorching.

If you want something fast and easy, this is perfect. I baked some Red Lobster Recipe cheedar garlic biscuits to go with it and it was a perfect combination. Anita says it tastes like Applebee's broccoli soup to her. Hope you enjoy it if you try it out.

Totally wonderful. Thanks for posting this Laura. Truthfully, it didn't occur to me. Yes, it is wonderful soup and the cheddar garlic biscuits sound scrumptous, also. I'm really glad you liked it. I've been thinking about the Applebee's comment I made...it was either there or Ruby Tuesdays. I simply can't remember. For some reason Ruby Tuesdays is wanting to stick in my head now.

Anyway, regardless of where it was, it was wonderful.

Hope you guys try it.

Well, being that both of you have tried it, it must be worth making. Not that I doubted either of you individually! Don't think I have any broccoli in the freezer, so I guess that'll have to wait. Not buying groceries this week since we'll be leaving for Ohio Thursday.

I have a question. How did Mark get his picture up there as a follower and all of the rest of us are a ghost of a figure?!?!?! Just wondering.

Also, how do we get this set up for the correct time for when we're posting these comments? It's 11:54 and this comment will post at 9:54. HMMMMM?

Someone please advise us about posting our photo. Mine'll keep the crows out of our blog/blah/blach.

I make cauliflower soup with same ingredients above, but use cream of chicken soup instead of the celery. Add a little carrot for color and it's yum. "Make you smack your Grandma down as Mother would say." Never understood that one, who would want to?

Ooohh. I will definitely try the cauliflower soup, Aunt Linda. My gang loves any kind of soup.

Here's the Taco Soup Recipe. Anita if you'd rather put this as a post instead of a comment, have at it and just erase this comment. :)

Taco Soup Recipe

2 lbs. ground beef
1 finely chopped onion

Brown and drain the beef/onions.

Add to meat mixture:
2 pks. Taco seasoning mix
2 pks. Ranch dressing mix

Add the following (undrainded):
2 cans kidney beans
1 can pinto beans
1 can Rotelle tomatoes
1 can diced tomatoes
2 cans shoe peg corn
2 cups water

Simmer for 2 hours. Serve over tortilla chips. Garnish with sour cream, cheese and green onions.
